1 can of pumpkin purée
4 medium-sized eggs
½ cup (1 stick) infused coconut oil
2/3 cup of water
3 cups sugar of your choosing
3 ½ cups flour of your choosing
2 teaspoons baking soda
¼ teaspoons salt
1 teaspoon cinnamon (more to taste)
1 teaspoon nutmeg
1 cup dark chocolate chips (optional)
½ cup pumpkin seeds to sprinkle on top (optional)
Preheat the oven to 350 degrees.
Grease two 12-serving muffin tins.
Mix the pumpkin, eggs, melted coconut oil, water and sugar in a large bowl until well blended.
Sift together the dry ingredients.
Stir the dry ingredients into the pumpkin mixture until just blended.
Fold in the chocolate chips, if desired.
Spoon the mixture into muffin tins, using liners if desired.
Sprinkle pumpkin seeds on top (optional)
Bake until the muffins are golden brown and a toothpick inserted into the center of a muffin comes out clean, about 40 minutes.
